Italian Cake Recipe for Torta del Cielo
This Italian Cake Recipe is for Torta del Cielo - literally "cake of the sky" or "heavenly cake". Although listed as an Italian cake, it's an almond cake also made in Spain and Mexico. The ground almonds produce an almond flavoured, moist sponge which is not difficult to make.

Ingredients
225g...8oz unsalted butter (preferably), or margarine
175g...6oz whole almonds, ideally still in their skins
225g..8oz sugar
3 medium eggs, gently beaten
1 tsp almond essence
1 tsp vanilla essence
70g...2 1/2oz plain flour
A pnch of salt (optional)
To finish:
Icing sugar
Flaked almonds (optional)
One greased and base lined 20cm/8in round (or similar square) cake tin
Preheat the oven to 180 deg C, 350 deg F, Gas Mark 4.Use a food processor or coffee grinder to grind the almonds into a fine to medium ground mixture. In a suitable mixing bowl, cream together the butter with the sugar until light and fluffy. Gently beat in the almonds, eggs, and the vanilla and almond essences until well mixed. Sift the salt and flour into the bowl and stir together gently to combine all the ingredients. The mixture is then transferred to the prepared tin and placed in the centre of the preheated oven for about 45-50 minutes. It will be springy and golden brown when cooked, and a skewer, or similar, pushed into the centre will come out clean. Allow to cool on a wire rack for about 10 minutes before carefully removing from the tin, and leaving on the wire rack to cool completely. Dust with icing sugar, and decorate the almond cake with flaked almonds (if you wish) before serving.
