A Rich Chocolate Layer Cake Recipe




This chocolate layer cake recipe produces a chocolate cake that is rich and fudgy. Serve it as a dessert or just enjoy this homemade cake as a treat with a good cup of coffee.
Chocolate Layer Cake

Ingredients

125g...1/2 cup butter (or margarine)
125g...1/2 cup caster sugar
125g...1 cup self raising flour
(or plain flour sifted with 1 1/2 tsp baking powder)
75g...1/2 cup ground almonds
50g...1/2 cup cocoa powder
25g...2.5 tbs powdered drinkng chocolate
2 eggs, lightly beaten
2 5ml spoons...2 tsp strong black liquid coffee

Butter Icing Filling

50g...1/4 cup butter
100g...1 cup icing/confectioners' sugar, sifted
50g...2 oz plain (semisweet) chocolate, melted over hot water
2 5ml spoons...2 tsp strong black liquid coffee

Glace Icing

100g...4 oz plain (semisweet) chocolate
1 15ml spoon...1 tbs strong black coffee
Knob of butter
50g...1/2 cup icing/confectioners' sugar, sifted
Chopped walnuts for decoration

One 20 cm/8 in loose bottomed cake tin, greased, with the bottom lined



Preheat the oven to Gas Mark 4, 180 deg C, 350 deg F.

In a suitable bowl cream together the sugar and butter until fluffy and light. In another bowl blend together the flour, almonds, cocoa powder and drinking chocolate, then mix a little at a time into the creamed butter mixture. Slowly add the eggs at the same time. Finally, stir in the black coffee.

Spoon the mixture into the prepared cake tin, and bake in the pre-heated oven for 50-60 minutes. Test with a skewer or stick to check the centre is cooked (it should come out clean) before removing from the oven and allowing to cool for 20 minutes. Turn out of the tin and leave to cool on a wire rack.

For the butter icing filling, cream the butter and icing/confectioners' sugar together until light and fluffy. Gently beat in the melted chocolate and coffee. Carefully slice the the cooled cake into two halves and use the filling to build the cake.

The final stage in following this chocolate layer cake recipe is to make the glace icing. Melt the butter, chocolate and coffee together over a very gentle heat before stirring in the icing sugar to make a smooth mixture. Turn up the heat a little and when the mixture just begins to bubble, pour over the cake and smooth with a hot, wet knife. Use the nuts for decoration.
