Cups, Grams or Ounces For Your Cake Recipe?
No matter whether we are following the easiest cake recipe or attempting to make the all-important wedding cake, it's essential we follow a measurement system consistently. In researching homemade cakes for this website, the differences in systems of measurement, and kitchen jargon, have been very noticeable.
Not only does a cake recipe come in all the different systems of weight and volume measurement but for example, what the British call icing, the Americans and Australians call frosting, and when the British mix the ingredients together the end product is cake mixture, but the Americans call it batter.
Also, cooks in the United States usually measure ingredients by volume, while in Europe the standard is to measure dry ingredients by weight and liquid ingredients by volume. And just to add to the confusion, many countries use measuring devices with similar (and sometimes even identical names, but which are actually different in size. For example, 1 cup has the following equivalents: U.S. = 237 millilitres, U.K. = 284 millilitres, and Australia = 250 millilitres.
Rather than try and provide every sponge cake recipe, or other cake recipe, in every measurement system, I have decided to produce the recipes in the most appropriate system with conversions if available. So, for example, an American recipe for a cake will usually use American units, but a recipe for an Italian cream cake will usually use metric units.
So the principle is to stay with the original units, but there may be exceptions so please don't hold me to it all the time!

These weights are approximate and have been rounded slightly, up or down so if you're following a cake recipe it's best to stick with one system or another and not mix units. If
you want exact conversions then 1 oz = 28.4 grams.
