Unusual Banana Cake Recipe


This banana cake recipe is not like most banana cakes, made simply with mashed fruit. It contains a whole banana so when you cut it you get a slice through the middle of your piece of banana cake! Make sure you use a firm, barely ripe banana for the best results.


Banana Cake Recipe


Ingredients

250g...8oz self-raising flour
1 tsp ground nutmeg
1 tsp cinnamon
125g...4oz margarine or soft butter
125g...4oz caster sugar
grated rind of one lemon
2 medium eggs, beaten
3 well ripe bananas, mashed
25g...1oz dried sultanas, or raisins
6 tbs honey
1 firm, whole, barely ripe banana

One standard 1kg/2lb loaf tin, well greased


Preheat the oven to 180 deg C, 350 deg F, Gas Mark 4.

Sieve the flour into a mixing bowl along with the spices. Rub in the margarine, or use a handheld mixer, to produce a fine crumbly texture. Gently fold in the sugar, followed by the beaten eggs, dried fruit, lemon rind, mashed bananas and honey. Gently mix together all the ingredients to produce a well blended batter.

Transfer half the mixture into the prepared loaf tin, followed by the firm whole banana and then add the rest of the cake batter.

The banana cake should bake for about 1 1/2 hours. But check about fifteen minutes before to see if a skewer pushed in towards the corner of the cake comes out clean. Try to avoid the whole banana!

When cooked, leave to cool in the tin for about ten minutes. Turn out onto a rack to cool completely. When cool, slice and serve, amazing your friends with slices of whole banana hiding in the cake!
